Baby
Fried Rice:
Serves 12
Ingredients:
5-cup diced white onions
3 1/2-cup peeled and sliced carrots
10-cups precooked rice preferably 24hrs old
1-cup vegetable oil
5-lb raw baby diced and sautéed in soy sauce
1-tbs soy sauce
6-eggs
Heat the oil in a large
wok for 3-4 minutes or until smoking. Add all the vegetables and
cook until tender, meanwhile be sure to swirl the wok around to
evenly distribute the oil.
Following, add the
diced baby slowly and cook on low for 15-20 minutes. Be sure not
to overcook as the flesh will be tough and sour.
Finally, add the rice and an additional cup of oil, cook until
crispy. Make room in center of wok for eggs and scramble the eggs
until thoroughly cooked then stir into remaining ingredients.
Add soy-sauce and serve! Voila!
